What it's good for

How do I cook it?

It's really easy to cook amaranth. Put 1 cup amaranth and 3 cups cold water in a saucepan to make 3 cups of cooked amaranth. Bring to a boil, then reduce heat and simmer, uncovered, until water is absorbed, about 20 minutes.
